Set in the Tamba mountains of Hyogo Prefecture, the home of Kobe Beef, this experience opens the gates of a working Wagyu farm that is normally closed to the public. It is offered in exclusive partnership with the farm, one of Hyogo’s most decorated producers, whose beef has won the Prime Minister’s Award at Japan’s national Wagyu competition. The farm is a little over an hour by car from Osaka and about 1.5 hours from central Kyoto, so it works as a day trip from either city. Guests follow the life of Tajima cattle, the bloodline behind Kobe Beef, from birth to maturity. They learn how calves are bred, what they are fed, and how nearly three years of careful daily care in a valley fed by mountain snowmelt shape the flavor of the beef. Every explanation is given in English, so guests understand the reasons behind each stage of the animal’s life, not just what happens. From the farm, guests move to a private dining room. They can grill the Wagyu themselves with a specialist beside them, or watch closely while it is cooked for them. Staff walk them through the different cuts and through Japan’s grading system, including what the letter and number in a grade such as A5 actually measure, and explain what sets this farm’s beef apart. Guests also learn the best ways to cook and pair each cut. Tasting several cuts side by side, they connect everything they saw in the barns to what is on the plate.
